We have been uncooking up a storm over the past few days in preparation for our SA tour with David Wolfe. We have loved using our new book, Easy Living Food, and have realised what a great resource it is going to be in our Earthshine kitchen!
Sitting in the dehydrator right now…. Super Granola (page 62). This is definitely a family favourite. Apart from being a great cereal, it is also a delicious snack for lunch boxes. We normally make the recipe five up, and this lasts us for a few months. We used brazil nuts as the creamy base, and added flax and chia instead of nuts into the bulk mix.
Also in the dryer now are the Protein Kale Crisps (page 98). You will find curly kale here: ethical.org.za and here: Organic Zone. Curly kale is our favourite variety for these chips, as the folds in the leaves hold the cheezy sauce beautifully.
We couldn’t resist making up a giant batch of Crumbed Onion Rings (page 126). They store very well and if they actually manage to make it to the dinner table before they are all gobbled up, they add a fabulous dimension to the meal.
